We are currently recruiting an exceptional Junior Sous Chef to join our Heathrow kitchen team. Working in a fast-paced, high-volume operation, you will play a key role in supporting the delivery of high-quality food while upholding the exceptional standards synonymous with Fortnum & Mason

This is an exciting opportunity for a passionate and ambitious chef looking to develop their leadership skills within a premium hospitality environment. Working closely with the Senior Sous Chef and Head Chef, you will help drive kitchen performance, support the development of junior team members, and ensure an outstanding dining experience for our guests

Key Responsibilities

  • Support the Senior Sous Chef and Head Chef in delivering food to the highest standards
  • Assist in the day-to-day running of your section within a busy kitchen operation
  • Coach and develop Chef de Parties and Commis Chefs, leading by example
  • Monitor food quality, consistency, and presentation to ensure Fortnum & Mason standards are maintained
  • Complete section checks, audits, and temperature records accurately and on time
  • Assist with stock control, stocktakes, and inventory management
  • Identify operational challenges and communicate them proactively to senior chefs
  • Work collaboratively with front-of-house teams to ensure seamless service delivery
  • Communicate menu changes, allergen information, and operational updates effectively
  • Demonstrate excellent planning, organisation, and time management skills
  • Ensure compliance with company policies, food safety procedures, and health & safety standards
  • Help minimise wastage while maintaining product availability and quality
