An exceptional opportunity presents itself for a Demi Chef de Partie to join Mauro Colagreco’ s Restaurants the Raffles London at the OWO.
Reporting into Executive Chef, you will assist Sous Chefs/ Chef de Parties in the preparation and service of food ensuring that the highest standards are always maintained and to ensure that the Kitchen areas designated, equipment and utensils are always kept clean & tidy to the standards required by the Hotel.
Specifically, as the Demi Chef de Partie, your responsibility’s will include:
- Maintaining and running of section.
- Correcting Storage and labelling of food stuffs, equipment, and dry goods.
- Checking and ordering of equipment via correct channels.
- Production of mise en place to set standards.
- Involvement in production and development of dishes for all outlets, setting standards.
- Involvement in training of commis chefs and apprentice chefs to set standards.
- Contributing to the effective management of costs, zero waste factor.
- Maintaining effective working relationships with colleagues, supervisors, and managers.
- Ensuring new employees are made aware of the correct standard.
- Ensuring there is a harmonious and cordial working environment.
- Assisting the Manager in spot checks to maintain departmental standards.
- Be prepared to conduct job training with staff to maintain department standards.
